Yes, I know, I’ve neglected to post for a couple of days and now I’m late with today’s word. What can I say, sh!t happens.
So without further adieu, here’s today’s word….
England, France ~ Fish, meat or poultry meat processed to a very fine forcemeat, bound with eggs or fat, shaped with two spoons into small round or oval dumplings and poached in a cooking liquor. Served as a garnish or as a main course with a sauce.
This is the definition from my food dictionary. However, as we watch so many cookery shows, we’ve seen quenelles made from foodstuff other than what is listed above. A quenelle can be made from ice cream, sorbet, mashed potatoes or even hummus; anything that will hold its shape.
